Zuppa di Farro
Ingredients (for 4 people) : 150 gr. spelled, 200 gr. of dried red beans, a small onion, a carrot, a stalk of celery, vegetable broth, a spoonful of conserve, pepper in grains to be grinded, extra virgin olive oil.Procedimento : Boil the beans (previously soaked in water for at least 12 hours) in a liter and a half of broth. As soon as they are cooked, add half and put the puree back into the cooking broth. In another pan, brown the minced smells with oil and water for a few minutes. Then add a tablespoon of preserves already diluted in a little water.
Cook for about ten minutes, then pour in the broth with the beans, adding a minimum quantity of ground pepper and spelled (which should not be soaked). If necessary, add a little boiling water and then cook for about an hour. Before serving (seasoning each dish with a drizzle of raw oil) let it rest for an hour in the pot with the heat off. It is recommended to serve not too hot.
